Using Herbs

Herbs are full of vitamins and minerals and other subtle health promoting substances, and they make your food taste wonderful. They add few if any calories to a meal, but they will make it more palatable, more nutritious, and your whole family will get the healthy benefits. I incorporate herbs into as many recipes as I can.

To get the most of the nutritional and health benefits, you should always use the freshest herbs that you can find. Herbs are very easy to grow in your home, and there are none fresher than those picked just before cooking!

The best way to buy dried herbs, I’ve found, is from the bulk department at Whole Foods (or other health food stores). These dried herbs are very fresh and fragant. You can buy small amounts at a time so you only get what you need for a few weeks or so, and you’ll only spend maybe 25- 50 cents for each herb. Store them in baby food jars. Buying herbs this way means you’ll never have them sitting in your cupboards for months or years, only to go stale and lose their vitality.
