About 4 chicken breasts, cooked and shredded
Taco seasoning
1 can black beans, drained and rinsed (optional)
1 cup fresh or frozen corn (optional)
Olive oil
Tortillas
Shredded cheese
Sour cream
Salsa
- Mix together chicken, beans, corn, taco seasoning in bowl
- Heat small amount of olive oil in skillet.
- Place tortilla in pan, put one spoonful of chicken mixture on one site, sprinkle on shredded cheese, and fold over.
- Fry on medium-high heat for 1-2 minutes on each side (tortilla should brown a bit, and cheese should melt)
- Serve with sour cream & homemade salsa
