Chicken Quesadillas

About 4 chicken breasts, cooked and shredded

Taco seasoning

1 can black beans, drained and rinsed (optional)

1 cup fresh or frozen corn (optional)

Olive oil

Tortillas

Shredded cheese

Sour cream

Salsa

  1. Mix together chicken, beans, corn, taco seasoning in bowl
  2. Heat small amount of olive oil in skillet.
  3. Place tortilla in pan, put one spoonful of chicken mixture on one site, sprinkle on shredded cheese, and fold over.
  4. Fry on medium-high heat for 1-2 minutes on each side (tortilla should brown a bit, and cheese should melt)
  5. Serve with sour cream & homemade salsa
