2 C dried red kidney beans
1 C brown rice
Warm filtered water
3 Tbs whey (instructions for whey here)
2 cans coconut milk
2 bunches green onions (or 1 large regular onion) cut up
4-6 jalapeƱos, seeded and chopped
6 cloves garlic, mashed
4 tsp dried thyme
2-4 tsp sea salt
1 package kielbasa, sliced into bite-size pieces (or smoked sausage, or turkey kielbasa, etc)
- The night before place beans and rice together in warm water with 3 Tbs whey; let soak overnight.
- In the morning, drain & rinse beans and rice and place in pot with enough water to cover. Bring to boil and skim.
- Put beans and rice with boiling water plus remaining ingredients, except salt, in crock pot. Add 4 cups filtered water and stir.
- Cook on medium all day. Add salt to taste.
