Crock Pot Beef Stew

3 lbs stew beef

1 C red wine

1 quart homemade beef stock (or beef broth from grocery store)

4 tomatoes, peeled, seeded & chopped (or 1 can tomatoes from grocery store)

Several sprigs fresh thyme, or a generous pinch dried thyme (about 1 Tbs)

2 cloves garlic, crushed

8 small red potatoes

1 lb carrots, peeled and chopped (fairly small, so will cook all the way through)

Sea salt & pepper

  1. The night before put beef and wine in a gallon size freezer bag to marinate over night in the fridge
  2. In the morning, put marinated beef & wine in crock pot, along with all the other ingredients and cook on medium all day
  3. Season to taste with salt and pepper
